At Fairfield, Iowa’s Maharishi University of Management, all food served in the dining halls is vegetarian or vegan.

3) St. Mary’s College of Maryland

 At St. Mary’s College of Maryland, the on-campus garden doubles as a classroom in courses including Books that Cook and Biology of the Garden.

4) University of California—Davis

At the University of California—Davis, organic tomatoes grown for research at the school’s Russell Ranch are later used for tomato sauce in the dining halls.

5) University of Pennsylvania

In one of four dining halls at the University of Pennsylvania, Chef Lydia Kumpa’s hummus and dip bar offers entirely vegan cuisine.

 6) Westminster College

In Westminster College’s Eco-Logical Eating course, professor Nina Vought serves students at this Salt Lake City school vegan cuisine, such as this dish of raw pasta with flax seed crackers, as they learn about the environmental impacts of diet.
